Variegated Lemon Thyme neat dome in stone garden urn with gold and green tiny leaves

Growing variegated lemon thyme

This is lemon thyme with gold-edged leaves. Each small green leaf is rimmed in gold to cream, the flowers are pale lilac, and it grows into a neat, low dome that looks as good in a pot as it does in the herb bed. The colour is brightest in winter and spring.

Like all variegated thymes, it can throw plain green shoots. Cut them out as soon as you see them, back to where the variegated leaves start, as they grow faster than the coloured shoots and can slowly take over.

Give it full sun and light, well-drained soil. In South East Queensland plant it in autumn, in a raised bed, a rockery or a pot of gritty mix, so it's well settled before the wet, humid summer, when soggy roots rot. In a pot, stand it on feet so it drains and water when the top few centimetres of mix are dry. It mixes well in a wide, shallow pot with pizza and Westmoreland thymes, rosemary, hyssop and winter savory, all herbs for a sunny spot.

Trim it lightly after flowering, never into bare, old wood. The variegation doesn't come true from seed, so ours are grown from cuttings.

Harvesting

Snip sprigs any time, but never strip the plant bare. Regular picking keeps it compact and bushy.

In the kitchen

Use it as you would plain lemon thyme, with chicken, fish and vegetables, adding it near the end of cooking to keep the lemon note. A few sprigs steeped in just-boiled water make a light, lemony tea.

When your plants arrive

Follow these three steps so your herb plants survive and thrive.

  1. Step 1

    Unwrap

Remove any tape and unwrap your plants carefully. Pick off any yellow or damaged leaves.

  2. Step 2

    Soak

Sit the tubes in a container of water or weak seaweed solution until the air bubbles stop, then lift them out. Don't leave them sitting in water. We use our own Seaweed Boost.

  3. Step 3

    Plant

Plant them as soon as you can. If you can't yet, repeat step 2 every day and give them some sun until they're planted.

How we pack and send your plants

We water, wrap and tape every plant, then send them by Express Post on Mondays and Tuesdays.

Planting it in the ground or a pot

In the ground

  • Choose a spot with free-draining soil and the right amount of sun for the plant. Digging in some compost helps.
  • Dig a hole a little bigger than the root ball, ease the plant out of its tube and cover the roots gently with soil.
  • Water it in well, then dig a finger in beside the plant to check the soil is wet right down.
  • Sprinkle an organic fertiliser around it, and mulch to hold in moisture and keep the weeds down.
  • Water every day for the first week, then twice a week. Once it's settled in, once a week is usually enough.

In a pot

  • Use a pot with plenty of drainage holes and a good organic potting mix.
  • Plant it the same way, then water it in well. Push a finger 5cm into the mix to check it's wet through.
  • Add an organic slow-release fertiliser on top. Even mixes with fertiliser added rarely have enough for long.
  • Water every day for the first week, then regularly: pots dry out much faster than garden beds.

In very hot or cold spells, a weak seaweed solution helps plants cope.

Online plant order

I recently ordered some more herbs (thyme - variegated lemon and pink matting thyme, golden rod, evening primrose, winter savory and catmint) to plant out at home, and all the plants I ordered arrived timeously and carefully packaged so there was no damage at all to the plants. I have repotted each herb into an individual pot, and will let them grow a little bigger before using them. I am thrilled with the plants I received and highly recommend Mudbrick Herb Cottage as they are fast and efficient at dispatching plants.

HERB LOVER AND PURCHASER

What can I say, I love, love herbs, I am constantly picking and picking and adding to my salads and cooking. This is the third time that I have purchased herbs and geraniums from Mudbrick Cottage and find myself going back again and again because of the quality and variety that is available from the farm. Each time the orders have arrived very quickly, the plants themselves are very healthy and I have keenly planted them in my herb garden ready to use. Thank you Sandra, I am now addicted and always looking to add to my collection. I will be back.

A testament to resilient herb quality!

My herbs arrived super quick! They were packed so well and still damp and sprightly looking when I unpacked them. They then had to wait in their tubes for a week until I had the garden ready for planting. I can only say it is a testament to the incredible quality of the herbs supplied that they then survived what happened next... my husband ran over them in the car as I was setting up to plant them! I gentle removed them from their squashed containers and planted them with fingers crossed - 5 out of 6 have survived! Well done Mudbrick for growing such resilient plants.
