Butterfly pea flower has been used as a natural food colouring in Southeast Asian cooking for centuries. In Malaysia, the blue extract colours nasi kerabu (blue rice), and in Thailand it is used in drinks and desserts. The US FDA approved butterfly pea flower extract as a food colour in 2021.
The butterfly pea vine actually grows in tropical parts of Australia (Queensland, Northern Territory, and Western Australia), where it was introduced and has naturalised. You may have seen the striking blue flowers growing on fences and trellises in warmer parts of the country.
