Cooking: Crush 6 to 8 berries per serving and add to game meats (kangaroo, venison, duck), pork roasts, or sauerkraut. Toast lightly in a dry pan before crushing to intensify the aroma. Works well in spice rubs with black pepper, Rosemary, and garlic.
Tea: Lightly crush 1 teaspoon of berries and steep in a cup of boiling water for 10 to 15 minutes. Strain and enjoy. Pairs well with fennel and peppermint for a digestive blend.
The word "gin" traces directly back to juniper. It comes from the Dutch "jenever" (itself from the Latin "juniperus"), which was originally a medicinal spirit flavoured with juniper berries in 17th-century Holland.
Juniper "berries" are not true berries at all. They are fleshy seed cones that take 2 to 3 years to ripen, starting green and maturing to a deep blue-black with a distinctive waxy bloom.
In medieval Europe, juniper branches were burned to fumigate rooms during outbreaks of plague, and bundles were hung above doorways as a folk charm against evil spirits.
