Fennel seeds (Foeniculum vulgare) have a warm, sweet liquorice flavour that makes them one of the most versatile spices in the kitchen and one of the gentlest digestive herbs in traditional medicine. These certified organic fennel seeds are Australian grown and equally suited to cooking, brewing as a fennel tea, or adding to spice blends. Fennel has been valued as a digestive aid in both Ayurvedic and European herbal traditions for thousands of years.

Fennel seed tea: Lightly crush 1 to 2 teaspoons of fennel seeds using a mortar and pestle, then add to a cup of freshly boiled water. Steep for 10 to 15 minutes and strain. The tea is naturally sweet with a mild liquorice flavour. Pairs beautifully with Peppermint for a refreshing digestive blend.

Cooking: Dry-toast whole seeds in a pan for 1 to 2 minutes until fragrant, then grind or use whole. Essential in Italian sausage seasoning, Indian spice blends, and roasted vegetable dishes. Combines well with Ginger Root in warming winter teas, or with Turmeric in golden milk blends.

After-meal digestive: In Indian tradition, fennel seeds are chewed plain or lightly roasted after meals to support digestion and freshen the breath.

The word "marathon" comes from the ancient Greek word for fennel. The Battle of Marathon in 490 BCE was fought on a field covered in wild fennel plants. The Greeks also believed fennel could bestow strength and courage on warriors.

Fennel seeds are generally considered safe for dogs in small amounts and are sometimes included in natural pet treats. Keep quantities small and avoid concentrated essential oils around pets.

I add the thinly sliced bulb to salads or ear it raw with dips. The seeds have a wonderful aroma, and I use them in cooking and as a tea (with raw honey, licorice, peppermint) - delicious. The seeds from Mudbrick Cottage arrived in perfect condition. My only concern was that the package had been opened, and resealed, for inspection by bio-authorities.Thank you to all at Mudbrick Cottage for sharing these amazing herbs.
