Pine needle tea (Pinus patula) is a caffeine-free herbal infusion made from dried pine needles, producing a bright, mildly citrusy cup with a subtle resinous warmth. Pine needles are a natural source of vitamin C, containing several times more than orange juice, along with antioxidant compounds including proanthocyanidins and catechins. Pine needle tea has been valued across many cultures for centuries as a nourishing, warming drink.

Hot brew: Chop or crush 1 to 2 tablespoons of dried pine needles for tea to break the natural waxy coating. Place in a cup and pour over water that has just come off the boil (80 to 90 degrees, not boiling). Cover and steep for 10 to 20 minutes. Strain and enjoy. Boiling water destroys vitamin C and creates a more bitter cup, so slightly cooled water is best.

Cold brew: Place needles in a jar, cover with cold water, and steep in the refrigerator for 8 to 12 hours. This preserves the maximum vitamin C content and produces a milder, refreshing drink.

Blending: Add a squeeze of lemon and honey for a classic pine needle tea. Blends well with Ginger Root for extra warmth, Chamomile for a calming evening cup, or Peppermint for a refreshing twist.

In 1536, French navigator Jacques Cartier and his crew were saved from scurvy during a harsh Canadian winter when local Indigenous peoples showed them how to make a tea from pine needles, which are rich in vitamin C.

Not all conifers are safe for tea. Yew trees (Taxus species) are extremely toxic, and Norfolk Island Pine is not a true pine and should never be used. Always use needles from verified, safe Pinus species.
