Thyme is one of the essential herbs in any kitchen garden. It is tough, drought tolerant and evergreen, so you can pick fresh sprigs all year round. Our thyme plants are all certified organic, propagated and raised at our nursery on the Gold Coast.

With 18 varieties in the collection, there is a thyme for every use. Common thyme (Thymus vulgaris) is the classic culinary variety and the one most recipes call for. Lemon thyme adds a bright citrus note that works beautifully with fish, chicken and roasted vegetables, and we also carry a variegated lemon thyme with attractive gold-edged foliage. For something different, try pizza thyme, caraway thyme or orange peel thyme, each with its own distinctive flavour.

If you are looking for a groundcover, our creeping thyme varieties are ideal. Pink creeping thyme and white creeping thyme form dense, low mats that look stunning between pavers, along paths or spilling over rock walls. They handle foot traffic well and produce masses of flowers in spring that attract bees. Pink Chintz thyme and Doone Valley thyme are also excellent groundcover options.

    About Thyme Herbs

    Thyme is one of the hardest-working herbs in the garden. It thrives on neglect, handles poor soil, shrugs off drought and still delivers fresh flavour every time you reach for a sprig. It is also one of the best herbs for attracting bees and beneficial insects.

    We grow 18 thyme varieties at Mudbrick Herb Cottage on the Gold Coast, covering everything from classic culinary types to low-growing creeping thymes for groundcover.     Does thyme grow all year round in Australia?

    Yes, thyme is evergreen and you can harvest it throughout the year. It grows actively in the warmer months and slows down a little over winter, but you will always have fresh leaves to pick. Thyme handles heat and drought well, making it a reliable year-round herb for Australian gardens.

    What is the difference between creeping thyme and common thyme?

    Common thyme grows upright to about 30cm and is the standard culinary variety. Creeping thyme stays low to the ground, typically under 10cm, and spreads outward to form a dense mat. Creeping types like pink creeping thyme and white creeping thyme are mainly grown as groundcovers, between pavers and along paths. They are edible but have a milder flavour than common thyme.

    What not to plant next to thyme?

    Avoid planting thyme near moisture-loving herbs like mint, basil or coriander. Thyme needs well-drained soil and does not like sitting in damp conditions. Good companions include rosemary, sage, oregano and lavender, as they all prefer similar dry, sunny spots.

    How do you grow thyme in Australia?

    Plant thyme in a sunny spot with well-drained soil. It does well in garden beds, raised beds and pots. Water sparingly once established as thyme is drought tolerant and overwatering is the most common problem. Trim it back lightly after flowering to keep it bushy. In warm climates like Queensland, thyme grows happily year-round with very little fuss.

    How long do thyme plants last?

    Thyme plants typically last five to six years before they start to get woody and lose vigour. When that happens, you can take cuttings from healthy new growth to start fresh plants, or simply replace them. Regular light pruning helps extend a thyme plant's productive life.

    Do you ship thyme plants across Australia?

    We ship thyme plants by Express Post to most Australian states. We are unable to send live plants to Western Australia, Northern Territory or Tasmania due to quarantine restrictions. Each plant is carefully packed to travel safely. See our shipping information page for details.
