Bilberry (Vaccinium myrtillus) is a certified organic dried berry traditionally used to support eye health and healthy circulation. Bilberry tea: Add 1 to 2 teaspoons of dried bilberries to a cup of boiling water. Steep for 10 to 15 minutes, lightly crushing the berries to release more colour and flavour. Strain and drink 1 to 3 cups daily.
In food: Add to porridge, muesli, yoghurt, baking or smoothies as you would dried blueberries. Rehydrate in warm water for 10 minutes before adding to recipes if a softer texture is preferred.
Blending: Combine with Elderberries for an anthocyanin-rich blend, or add Rosehip for a fruity, vitamin C-rich tea. A teaspoon of Ginkgo makes a complementary addition for circulatory support.
Bilberry is a close relative of the blueberry but is smaller, darker and more intensely coloured throughout the flesh. While blueberries have green flesh inside, bilberries are deep purple all the way through, which reflects their higher anthocyanin content.
During World War II, RAF pilots reportedly ate bilberry jam before night missions, believing it improved their night vision. While the science behind this is debated, the story helped popularise bilberry as an eye health supplement worldwide.
