Winter planting works so well in warmer parts of Australia because the soil stays warm enough for root growth while the cooler air reduces transplant stress. Herbs planted now will develop strong root systems through winter and take off when spring warmth arrives.

This is the ideal season for Mediterranean herbs. Rosemary, thyme, sage and oregano are all at their best when planted in the cooler months. It is also a great time for native herbs like lemon myrtle and warrigal greens, as well as hardy perennials like comfrey, valerian and elderflower.

    Yes, winter is actually the best planting season in many parts of Australia, especially in subtropical and warm-temperate areas. The soil stays warm enough for root growth while the cooler air means less stress on new transplants. Herbs planted in winter often outperform those planted in the heat of summer.

    What herbs grow well in winter?

    Mediterranean herbs like rosemary, thyme, sage, oregano and lavender thrive when planted in winter. Hardy perennials such as comfrey, valerian, chives and yarrow are also excellent winter plantings. Cool-season herbs including parsley, coriander and dill can be planted too, though they will grow more slowly until spring.

    Will frost damage my herb plants?

    On the Gold Coast and in most subtropical areas, frost is very rare. If you are in a frost-prone area, tender herbs like basil and lemongrass should wait until spring. Most Mediterranean and perennial herbs handle light frost without trouble. A layer of mulch helps protect roots in colder areas.

    How often should I water herbs planted in winter?

    Much less than in summer. Water new plantings well for the first week or two, then let the natural rainfall do most of the work. Overwatering in winter is a more common problem than underwatering. Check the soil before watering and only water if the top few centimetres are dry.
