Winter planting works so well in warmer parts of Australia because the soil stays warm enough for root growth while the cooler air reduces transplant stress. Herbs planted now will develop strong root systems through winter and take off when spring warmth arrives.
This is the ideal season for Mediterranean herbs. Rosemary, thyme, sage and oregano are all at their best when planted in the cooler months. It is also a great time for native herbs like lemon myrtle and warrigal greens, as well as hardy perennials like comfrey, valerian and elderflower.
