Dried rosemary (Salvia rosmarinus, syn. Rosmarinus officinalis) is one of the most versatile herbs in any kitchen or herbal cupboard. These certified organic whole rosemary leaves deliver a strong, piney, camphoraceous aroma and are equally at home in a roast dinner, a pot of herbal tea, or a homemade hair rinse. Traditionally used in Western herbal medicine to support healthy digestion and cognitive function, rosemary has been valued for centuries as the herb of remembrance.

Rosemary tea: Place 1 to 2 teaspoons of dried rosemary in a cup. Pour boiling water over the leaves, cover, and steep for 5 to 6 minutes. Strain and enjoy plain, or add a little honey and lemon. For a calming evening blend, combine with Lavender. For a refreshing, focused tea, blend with Peppermint.

Hair rinse: Add 1/4 cup of dried rosemary to 1 litre of boiling water. Steep for at least 30 minutes, strain, and pour over hair after shampooing. Massage into scalp, leave for 3 to 4 minutes, then rinse with cool water. Refrigerate and use within one week. Lovely combined with Nettle Leaf or Horsetail.

Cooking: Crush dried leaves between your fingers before adding to release the essential oils. Add early in cooking to allow leaves to soften. Pairs beautifully with lamb, chicken, roasted potatoes, and focaccia.

The name rosemary comes from the Latin "ros marinus" (dew of the sea). Sprigs of rosemary are worn on ANZAC Day in Australia as a symbol of remembrance, because rosemary grows wild on the Gallipoli Peninsula.

Rosemary is classified as non-toxic to dogs, cats, and horses by the ASPCA. Dogs with seizure history should avoid it. Rosemary essential oil (a concentrated product) is dangerous for cats, but the dried herb leaf is safe in small amounts.

Not recommended in medicinal amounts during pregnancy. May interact with blood-thinning medications and diabetes medications. Those with seizure disorders should avoid large amounts.
