Citrus blend: Combine lemongrass with Lemon Verbena and Lemon Balm for a triple-citrus herbal tea. Add Ginger Root for a warming twist.
Cooking: Add dried lemongrass directly to curries, soups, and broths. Simmer for at least 15 minutes to release the flavour. Use 1 tablespoon of dried lemongrass in place of 1 fresh stalk.
In the Caribbean, lemongrass is known as "fever grass" and is traditionally brewed as a tea during illness. The distinctive lemon scent comes from citral, the same compound found in lemon peel, which makes up around 75% of the essential oil.
Lemongrass grows well in Australian gardens, especially in Queensland and other warm, humid regions. It is generally considered non-toxic to dogs and cats, though the tough leaves can cause mild stomach upset if eaten in large quantities.
