Dried lemon balm tea from Melissa officinalis, also known as melissa tea, is one of the most popular calming herbs in the Western herbal tradition. This certified organic lemon balm has a gentle, sweet, herbaceous lemon flavour and is traditionally used to support relaxation and a calm state of mind. The lemon balm tea benefits are backed by a growing body of research, and its bright, uplifting flavour makes it a pleasure to drink any time of day.

Tea: Use 1 to 2 teaspoons of dried lemon balm per cup. Pour water that has just come off the boil over the herb, cover, and steep for 5 to 10 minutes. Covering the cup is important to keep the aromatic oils from escaping with the steam. Strain and enjoy.

Calming blend: Combine with Chamomile and Lavender for a soothing bedtime blend. For deeper relaxation support, try it with Passionflower.

Iced tea: Steep 2 to 3 tablespoons in 1 litre of cold water in the fridge overnight. Strain and serve over ice. Cold brewing produces a lighter, more refreshing flavour that is perfect for hot Australian summers.

The genus name Melissa comes from the Greek word for "honey bee," as the plant is one of the finest bee-attracting herbs in the garden. In the 9th century, Charlemagne ordered lemon balm to be planted in every monastery garden across his empire.

In 1611, French Carmelite nuns created the famous Carmelite Water by infusing lemon balm with lemon peel, nutmeg, and angelica root. The recipe was so prized that patents were granted by three successive French kings.

I needed both Melissa officinalis and Lavendula Angustifolia to make tinctures with and they were out of season. I now have both tinctures sitting very happily in a tin box in my wardrobe, ready to make gummies with, asking with heaps left over for other projects.
