Ceylon tea is a bright, brisk black tea (Camellia sinensis) with a clean finish and a light citrusy edge. It's lighter than a breakfast blend but still full of flavour, which makes it the one to reach for when you want a crisp, refreshing cup, hot or iced.

- Black or with a splash of milk: good on its own, and a little milk softens it without hiding the brightness.
- A good blending base: its clean flavour lets citrus peel, mint or dried flowers come through.
- Certified organic loose leaf: straight organic black tea with nothing added.
Hot: Use 1 teaspoon (2 to 3g) per cup of freshly boiled water, around 95 to 100°C, and steep for 3 to 5 minutes. Three minutes gives the brightest cup. Like any loose leaf black tea, it turns bitter if it's left to stew.
Cold brew iced tea: Add 2 tablespoons to a litre of cold water, leave it in the fridge for 8 to 12 hours, then strain. Cold brewing pulls out less bitterness, so it comes out smooth. Serve over ice with a slice of lemon.
With a twist: A teaspoon of Lemon Myrtle Leaves or a tablespoon of Spearmint Tea in the jug makes a lemony or minty iced tea. For a fuller, maltier cup with milk, English Breakfast Tea is the stronger choice.
Ceylon tea owes its start to a coffee disease. In the late 1800s a leaf rust fungus, nicknamed Devastating Emily by the planters, all but wiped out the coffee plantations, and tea was planted in their place.
Strong black tea can turn cloudy as it cools, when natural compounds in the brew bind together. It's harmless, and cold brewing mostly avoids it.
Store it sealed in a cool, dark cupboard away from strong smells, as tea leaves pick up odours easily.
Contains caffeine, about half as much as coffee, so keep to a few cups a day if pregnant. Tea can reduce iron absorption, so drink it between meals if your iron is low.
