Desert lime is Australia's only true desert citrus, and this desert lime powder is the whole Australian grown fruit of Citrus glauca, freeze dried and ground, rind and all. The fresh fruit barely lasts days off the tree, so freeze drying is how this sharp, aromatic native lime becomes an everyday pantry ingredient you can use by the pinch, all year round.

Start with a quarter to half a teaspoon and adjust, because the powder is concentrated. Whisk the freeze dried lime powder into vinaigrettes, yoghurt dressings and marinades for fish or chicken, stir it through butter sauces for seafood, or fold it into cheesecake, icings, shortbread and pavlova cream. A pinch in sparkling water, cordial or a gin cocktail is lovely, and mixed with sugar or salt it makes a very good glass rim.
In the native dessert pantry it sits naturally beside Strawberry Gum and Davidson Plum Powder, and it loves macadamia, coconut and white chocolate.
Desert lime is a traditional bush food, long collected and eaten fresh in season by Aboriginal people of inland eastern Australia, and colonial cooks of the 1890s were making it into jams, pickles and preserves.
Graziers once grubbed it out as a thorny paddock weed. The modern industry began when a Queensland grazing family started hand-picking the wild trees on their own property in the 1990s and ended up with a lime business bigger than their cattle operation.
It is also the fastest citrus in the world from flower to fruit, ten to twelve weeks, a desert survival trick for setting seed while the season allows.
