Galangal powder (Alpinia galanga) is a warm, aromatic spice that is essential to Southeast Asian cooking. Also known as Thai ginger or blue ginger, galangal powder is traditionally used in herbal medicine for digestive comfort and warming support, and is a key ingredient in Tom Kha, Thai curries, and Indonesian rendang.
