Carob kibble is the raw, kibbled pod of the carob tree (Ceratonia siliqua), broken into chunky, naturally sweet pieces with a mellow, cocoa-like character. Grown here in Australia and certified organic with no added sugar, it can be simmered into a naturally sweet, caffeine-free tea, snacked on straight from the bag, or ground into your own fresh carob powder.

Carob tea: Simmer 2 teaspoons of kibble in 1.5 cups of water for 10 to 15 minutes, then strain for a naturally sweet, caffeine-free brew. For a fuller coffee-style cup, simmer it alongside Roasted Dandelion Root or Roasted Chicory Root.
Snack or bake: Eat the pieces as a chewy, sweet snack or add them to trail mix. To make your own powder, grind the kibble in a spice grinder or high-speed blender and use it one-to-one in place of cocoa in baking.

Carob has been grown around the Mediterranean for thousands of years, and its remarkably even seeds were once used by traders as counterweights for gold and gems, giving us the word carat.
Because it contains none of the caffeine or theobromine found in cocoa, carob is a popular chocolate stand-in for homemade dog treats. Store the kibble sealed in a cool, dark place, where it will keep for many months.
