For a deeper nutritive extraction, try a long infusion: steep 2–3 tablespoons in a litre of boiled water in a sealed jar for 4–8 hours, then strain.

Cold brew: Combine 2 tablespoons of dried alfalfa with 500ml of cold filtered water in a sealed jar. Refrigerate overnight, strain in the morning, and serve over ice with lemon for a mild, refreshing iced tea.

Blending: Alfalfa pairs beautifully with other nutritive herbs. Try it with Goji Berry for a mineral and antioxidant-rich infusion, or blend with Sage for a traditional women's wellness tea. A few leaves of peppermint or spearmint will add brightness if you prefer a more flavourful brew.

If you grew up in rural Australia, you probably know this plant as lucerne. Its roots can reach 4–10 metres into the soil, drawing up minerals that shallow-rooted plants simply cannot access. That same depth is part of why the dried herb is so nutritionally dense.

The word "alfalfa" comes from the Arabic al-faṣfaṣa, meaning "father of all foods". When Persian armies invaded Greece in 490 BCE, they left behind fields of this prized fodder crop, and it has followed the trail of empires ever since.

Alfalfa's exceptionally high Vitamin K content made it a key research material in the 1930s, contributing to the discovery of Vitamin K itself, work that earned Henrik Dam the 1943 Nobel Prize in Physiology or Medicine.

Avoid if you have an autoimmune condition such as lupus (SLE). Not recommended during pregnancy. Very high in Vitamin K1 and may interact with warfarin and other anticoagulant medications.
