Chia seeds (Salvia hispanica) come from a plant in the mint family and soak up around ten times their weight in liquid, setting into a soft gel. That is what makes chia pudding work, thickens a smoothie and stands in for an egg in baking. Ours are certified organic whole seeds, the usual natural mix of black and white, ready to use straight from the bag.

Key Benefits

  • Good source of fibre - one tablespoon, about 15 g, carries roughly 5 g of dietary fibre.
  • Plant omega-3 - chia is one of the richest plant sources of ALA, the omega-3 found in seeds and nuts.
  • Protein and minerals - the seeds also bring protein, calcium, magnesium and iron to a meal.
  • Thickens without cooking - stir the seeds into any liquid and they set in about 15 minutes.
  • Almost no flavour - it slips into porridge, yoghurt, smoothies, baking and dressings without changing the taste.
  • Keeps well - whole seeds store for months in a sealed jar away from light and heat.

Chia pudding: stir 2 tablespoons of seeds into 150 ml of milk or plant milk, stand for 15 minutes or leave overnight in the fridge, then top with fruit. A spoonful of carob powder or a pinch of cinnamon powder makes it a treat.

Egg swap for baking: mix 1 tablespoon of chia with 3 tablespoons of water and leave it 10 minutes until it thickens. That stands in for one egg in muffins, pancakes and biscuits.

Every day: sprinkle a spoonful over porridge, yoghurt or a salad, or blend it into a smoothie with maca powder. Have a glass of water alongside, as the seeds keep drawing in liquid.

Black and white seeds come from the same plant and are the same thing nutritionally, so every bag carries a mix of the two.

Chia is a Salvia, which makes it a cousin of the garden sage, grown for its seed instead of its leaf.

Scatter the seeds on a damp saucer and they sprout within a few days, which is the trick behind the old terracotta chia pets.

Always soak chia or take it with plenty of liquid, as dry seeds swell quickly and can be hard to swallow on their own. Build up slowly if you are not used to much fibre.
