Pepper berries (Tasmannia lanceolata), also known as mountain pepper or pepperberry, are one of Australia's most distinctive native spices. These whole dried berries deliver a complex, fruity heat that builds gradually, quite different from common black pepper. Rich in antioxidants and naturally high in anthocyanins, pepper berries have been used in Aboriginal Australian food culture for thousands of years as both a seasoning and a natural food preservative.

In a pepper grinder: Grind whole dried pepper berries fresh over steaks, lamb, roasted vegetables, or eggs. Start with about half the amount you would use of black pepper, as the heat is considerably stronger.

Rubs and marinades: Crush coarsely with sea salt, garlic, and olive oil for a bold native rub for red meat or kangaroo. Also excellent in cream sauces, chutneys, and slow-cooked dishes.

Native pairings: Combine with Lemon Myrtle for a classic Australian seafood seasoning. Pairs beautifully with Davidson Plum Powder in fruity native sauces, and with Finger Lime Powder for a citrus and pepper contrast. A pinch of ground pepperberry also works surprisingly well in dark chocolate truffles and brownies.

Tasmannia lanceolata belongs to the Winteraceae, one of the most ancient flowering plant families on Earth. The family's vesselless wood structure makes pepper berries a living link to some of the earliest flowering plants.

Pepperberry is now a sought-after botanical in craft gin distilling, with award-winning Australian and international gins featuring it as a key ingredient. It is also exported to Japan to flavour wasabi products.
