Finger lime powder (Citrus australasica) captures the distinctive tangy, citrus-forward flavour of the Australian finger lime in a versatile powder format. Known for its sharp, complex citrus taste with floral undertones, finger lime has been part of Aboriginal Australian diets for thousands of years. Finger lime is the only citrus species that produces caviar-like juice vesicles, tiny pearls that burst with flavour when bitten. Scientists are now using finger lime genetics to develop disease-resistant citrus rootstock to combat citrus greening disease worldwide.
