Goji berry powder is the whole fruit of Lycium barbarum, freeze-dried and milled rather than heat-dried, which is why the colour stays so vivid. It tastes sweet-tart, somewhere between a cranberry and a sultana, and needs no soaking. A level teaspoon is a serve.

A teaspoon is a good starting serve. Blend it into a smoothie, stir it through yoghurt or porridge, or fold it into bliss balls and slices, where it does the sweetening and the colouring in one go. It disperses best in something with body, so blitz it rather than sprinkling it on a glass of water.

It sits well alongside other powders in the same bowl. Moringa Leaf Powder brings a green, grassy note, Maca Powder adds malty sweetness, and a little Kakadu Plum Powder pushes it tarter if you like it sharp.

Freeze-dried powders draw moisture out of the air, so keep the bag or jar sealed and store it somewhere cool and dry. If it cakes, break it up with a fork before measuring.

Goji is in the same family as tomatoes, potatoes and capsicum. The older English name is wolfberry; goji is the newer one and came in with the export trade.

Freeze-drying works by pulling the water out under vacuum while the fruit is still frozen, so it never sees heat. That is the difference between vivid orange-red powder and the dull brown you get from a hot dryer.

The bushes are thorny and the ripe fruit bruises the moment you squeeze it, so the berries are traditionally shaken onto mats rather than picked by hand.
