Parsley leaf (Petroselinum crispum) is one of the most versatile herbs in the kitchen, with a fresh, gently peppery flavour that lifts soups, sauces, salads and marinades. In cooking, stir through dishes near the end for the freshest flavour, or add a tablespoon to soups, stocks and sauces. Parsley has been grown around the Mediterranean for more than two thousand years and was woven into garlands by the ancient Greeks.
