Wattleseed (Acacia aneura), roasted and ground, is one of Australia's most distinctive native food ingredients. With a rich, complex flavour often described as a blend of coffee, chocolate, and hazelnut, this versatile powder has been a staple food for Aboriginal Australians for over 50,000 years. Wattleseed is naturally high in protein (18-25%), exceptionally high in dietary fibre (33-41%), certified low glycaemic index, and naturally gluten-free.

In baking and desserts: Add 1 to 2 tablespoons to bread dough, cake batter, biscuit mix, or pancake batter. The chocolate and coffee notes make it a natural partner for desserts like ice cream, panna cotta, and chocolate truffles. Stir into granola or porridge.

Savoury uses: Mix with Tasmanian Pepper Berries and salt for a native spice rub for meat and seafood. Add to dukkah blends with Lemon Myrtle. Works well as a sauce thickener, adding depth and body. Pairs with Davidson Plum Powder in native-inspired sauces.

Wattleseed has a credible claim as one of the oldest bush food crops in human history. Research published through the University of Western Australia confirmed Aboriginal use spanning over 50,000 years, with grinding stones dating back 30,000 years found at Cuddie Springs in western New South Wales.

The Golden Wattle is Australia's national floral emblem, and the green and gold national colours are derived from the wattle's foliage and flowers. Wattle Day is celebrated on 1 September each year.
