Assam tea is a bold, malty black tea (Camellia sinensis) that brews a dark, full-bodied cup. It's the tea to choose if you take yours with milk, whether that's a morning cuppa, a pot of chai or a glass of homemade milk tea.

Hot: Use 1 heaped teaspoon (about 2.5g) per cup of freshly boiled water, around 95 to 100°C. Steep for 4 to 5 minutes if you're adding milk, or about 3 minutes to drink it black.

Stovetop chai: Simmer a cup of water with 4 lightly crushed Cardamom pods, 2 Cloves, a piece of Cinnamon Stick and a few pieces of Ginger Root for 5 minutes. Add a cup of milk and 2 heaped teaspoons of Assam, bring it back just to the boil, then strain and sweeten to taste. The same spices make a caffeine-free evening chai with Rooibos Tea.

Milk tea: Brew it double strength, stir in sugar or honey while it's hot, then chill. Pour over ice and top up with milk, adding cooked tapioca pearls if you want bubble tea.

Assam comes from the large-leaf assamica variety of the tea plant, which can grow into a tree over ten metres tall if it's never pruned. Most green teas and Darjeeling come from a smaller-leaved bush.

Its malty strength is why Assam is the backbone of so many breakfast blends.

A strong pot of Assam often turns cloudy as it cools. It's harmless, and tea tasters have long read it as the sign of a strong, full-bodied brew.

Assam is strong and contains caffeine, so keep to a few cups a day if pregnant or caffeine sensitive. Drink it between meals if your iron is low, as tea can reduce iron absorption.
