Beetroot powder is beetroot (Beta vulgaris) dried and milled fine, with all the sweet earthiness of the fresh root and none of the stained chopping boards. A teaspoon is roughly one whole beetroot, so a small jar goes a very long way in smoothies, baking and anything that needs colour.

For a beetroot latte, whisk a teaspoon into hot but not boiling milk with a pinch of Ginger Powder. In baking it pairs well with Carob Powder Roasted, and if you are colouring drinks rather than food, Hibiscus (Rosella) Tea gives a similar ruby tone with a tart edge.
Beetroot can turn urine or stool pink for a day or so. It happens to roughly one in ten people, it is simply the pigment passing through, and it is nothing to be alarmed about.
Beetroot was grown for its leaves long before anyone bothered with the root. The swollen red root most of us picture is a comparatively recent piece of plant breeding.
Those same betalain pigments are used commercially as a food colour, which is why beetroot powder does such a tidy job of turning icing pink without anything artificial.
Beetroot is high in oxalates, so go easy if you are prone to kidney stones. It can also nudge blood pressure down, worth knowing if you already take medication for it.
