Dried lemon peel is the outer rind of Citrus limon, cut and dried so the aromatic oils stay where they are. It is brighter and more bitter than fresh zest and a little goes a long way, which is why it turns up in tea blends, bitters and slow cooking far more often than in the fruit bowl.

For tea, a teaspoon per pot is plenty, steeped five to ten minutes. It lifts a soft floral blend nicely, so try it with Chamomile Tea, or pair it with Orange Peel Sweet for a rounder citrus base. Go lightly, since too much peel pushes a blend bitter.

For baking and sauces, soak the peel in a tablespoon of warm water for ten minutes to soften it, then use it as you would zest. For bitters, steep the peel in spirit for a couple of weeks alongside a bittering root such as Gentian Root, then strain and bottle.

Lemons are a hybrid, most likely between citron and bitter orange, so there is no wild lemon tree to trace them back to.

Almost all the aroma of a lemon lives in the peel. Limonene is the main compound, and it is the reason a squeezed rind sprays scent across the room while the juice smells of very little.

Dried citrus peel is a standard brewing aromatic in wheat beers, and a fixture in slow-cooked stews and rice dishes where it softens over a long simmer.
